We are all in for year Pizza has ruled the online food ordering scene, but now we have a new favourite. The first lockdown we all experienced last year has brought a new king to the arena of ordering food online. It is none other than biryani. Biryani is known for its rich aroma and flavours, and lately for dethroning Pizza as India's favourite food.
According to the numbers released by two big boys of the Indian online food scene. Zomato and Swiggy. Indians have ordered closed 1 crore Biryani during the first lockdown. Swiggy delivered close to 54 lakh biryani, while Zomato delivered another 44 lakh orders of Biryani.
Restaurant and eating out is still a very unorganized sector in India. A considerable section of this industry has come online after the rise of smartphones and apps like Swiggy and Zomato. A study by FICCI and PWC in 2018 shows the organized Biryani segment in India is around ₹ 3000 crore in value. The unorganized segment is pegged at ₹ 25000 crores. Since 2018, the market has gone up by a few thousand crores.
With the rise of demand and popularity of Biryani in India, a series of cloud kitchens have come. These cloud kitchens have come. These cloud kitchens are growing at a steady pace. The demand for Biryani has reached such an extent that the operator of Domino's in India. Jubilant Foodworks, has decided to open a biryani cloud Kitchen chain called Ekdum.
Economically, Biryani is also an attractive investment. The growing number of cloud kitchens and chain of cloud kitchens have seen a steady margin. Biryani cloud kitchens generate around 30% -35% margin on a smaller scale. On the other hand, cloud kitchens that operate commercial- scale see a margin of up to 50%.
Unlike pizza, Biryani is a complete meal. It can be served during any meal of the day. Biryani is a favorite among India's metro, tier II and tier III cities. With no signs of slowing. We can expect other restaurant and food brands to venture into this segment soon.
